A few years ago, at a family get together, I made these potatoes, along with this grilled chicken recipe.
They were a hit.
Everyone was either asking for the recipe or asking for an invite the next time I made them.
They are really easy to make. You can pop them in the oven and forget about them.
I thought I’d share them with you for your next big get together.

Here’s what you need.
First, preheat the oven to 450. Then wash and cut up the potatoes into bite size pieces.
Clean and cut the onion into wedges.
Place in bowl, add the vegetable oil and mix well. Then add salt, pepper and garlic powder and toss them to coat well.
With cooking spray, spray a large piece of foil.
Add the potato mixture to the center of the foil and form a packet. Leaving room inside the packet for air circulation.
And place in baking dish.
Bake for 25 to 30 minutes. Open packet and serve.

4 medium potatoes, cut into bite-size pieces, about 5 cups
1 small onion, cut into thin wedges
2 tablespoons vegetable or canola oil
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 450F or preheat grill to medium-high. Spray foil with cooking spray, set aside.
Coat potatoes and onion with oil, then add dry ingredients. Coat well. Put mixture in foil packet and fold the top and sides to seal, leaving room inside for air circulation. Set foil packed in baking pan and bake 35-40 minutes. Or until tender when poked with a fork.
