Easy Lemon Pie

I love lemon pie, but I don’t care much for meringue. We always made a lemon pie and put whipped topping on the top.

This recipe has the whipped topping mixed in. It’s delicious.

Here’s what you need…

Lemon flavored Jello, Cool Whip Whipped Topping, lemon juice, graham cracker pie crust, boiling water and ice.

Specific amounts listed below.

Completely dissolve Jello in boiling water, stirring constantly, takes about 3 minutes.

Add lemon juice and ice cubes and stir until Jello has thickened, about 2-3 minutes..

Remove any unmelted ice cubes and blend in Cool Whip with a wire wisk.

Whip until smooth and mixture will mound.

If not mounding, put in fridge until cool enough to mound.

Then add to graham cracker crust and chill.

 Easy Lemon Pie

    1    3oz. package lemon flavored gelatin

2/3    cup boiling water

    2    tablespoons lemon juice

    2     cups ice cubes

    1    8 oz. container whipped topping, thawed

    1    graham cracker pie crust

Dissolve gelatin completely in boiling water, stirring constantly, about 3 minutes. Add lemon juice and ice cubes and stir constantly until gelatin thickens, about 2-3 minutes. Remove any unmelted ice.

Using wire whisk, blend in whipped topping and whip until smooth and will mound. Chill, if necessary until mixture will mound. Spoon into pie crust and chill.

  1. MMmmMMmm! I love Lemon Pie, I also love Lemon Meringue. If we had to share a piece I would totally lick the meringue off your half! I know that’s just the kind of friend I am, don’t mention it. hahahaha! I will have to try your recipe it looks yummy! Look at you all Rachel Ray like!
