Baked Cod

This recipe is one of our favorites. It’s fabulous. Yes, it’s fish.  And yes, it stinks up the house. But it also starves you till it’s ready.

Here’s all you need: cod filets, butter, saltine crackers, egg white and pepper.

Preheat your oven to 400F. Drop your butter in the baking dish and place it in the oven.

While your waiting for the butter to brown. Start preparing the other ingredients.

Crush your saltine crackers.

Lightly beat the egg whites.

When the butter is browned, remove it from the oven and set it near your work area.

Then pat dry the cod filets with a paper towel.

Coat them with the egg white and then the crushed saltines. And put in the baking dish.

Sprinkle some pepper on them and put the dish in the oven.

Bake for 15-18 minutes, taking out of the oven every 5 minutes to baste with the butter that’s in the baking dish.

And you have baked cod filets.

 We usually eat them with just a salad.

Baked Cod

Ingredients:
1 stick butter (1/2 cup) do not use margarine
1 egg white, slightly beaten 
1 lb. cod filets, thawed
About 30 saltine crackers, crushed
Pepper to taste

Preheat oven to 400F. In 13×9″ baking dish, add butter, and place in oven. Brown butter but do not burn. Pat cod filets dry, dip in egg, then in crushed crackers turning to coat and place in baking dish. Add any leftover cracker crumbs to top of cod filets.
Sprinkle with pepper, I did not add salt due to the salt on the crackers.
Bake for 15-18 minutes, removing every 5 minutes and basting with the melted butter in baking dish.
